been so hectically busy lately with two exams this week (eeek!) and one next week i've definitely been on the exam grind for a couple of weeks now, and honestly can't wait for 9 days time when i will be officially be done with my third year of uni... what a year. anyway, sorry for the lack of posts - i will be back in action after this stressful time is over... and to keep me going for the next few days i have made a big batch of brain food :)
this is a spin off martha stewarts quinoa and apple salad with curry dressing (here) i didn't have all of the ingredients listed there, plus i like to change things up a little bit :) so here is my yummy version!
you will need:
1 cup quinoa
1 tsp curry powder
pinch of salt
2 tbsp lemon juice (a lemon should do!)
freshly ground black pepper
2 tbsp extra-virgin olive oil
2 tbsp raisins
1 small apple, chopped into smallish pieces
chopped fresh herbs (i used coriander, but anything will do!)
in a saucepan, bring 2 cups of water to the boil, add the quinoa and stir, cover and leave to simmer on low heat for about 11-13 minutes until all the water is absorbed and quinoa cooked (the little spirals should have opened).
in a bowl, whisk together the honey, curry powder, lemon juice, salt and pepper, slowly add olive oil whisking to create the dressing. once the quinoa is cooked, fluff with fork and add to dressing, add chopped apple, raisins and coriander and mix well.
there you have it...a healthy-ish dinner with lots of vitamins to keep you going through the study period :) enjoy! x
